ABC/XYZ analysis
Which dish makes the money and which one sells predictably.
ABC is by money: group A produces most of the revenue, C almost none. XYZ is by steadiness: X sells the same every day, Z is unpredictable.
- AX — the load-bearing dishes. They should never reach the stop list.
- CZ — candidates for removal: they sell little and unpredictably.
- AZ — bring in a lot, but unevenly. Be careful with stock.
Ingredients have their own ABC, and it answers a different question: the dish producing the most revenue is usually not made from the most expensive raw material.
⚠The ingredient ABC is ranked by money spent, not by consumption from cards: the first is measured (an invoice with a date and a total), the second is an estimate over a half-uncosted menu.
