Write-offs: spoiled, spilled, staff meals

Product that left without being sold. A reason is required.

Store → Write-offs → ingredient, quantity and a reason. A record without one tells nobody anything a month later.

A write-off is valued at that day's price and frozen — a later price change does not rewrite last month's waste figure.

A prep is written off at what its card says. So that one spoiled pot of sauce is not written off as nothing.
