Balances and «running out»
Where «should be there» comes from, and what it does not mean.
Store → Balances. For each ingredient: the last count + deliveries − what the cards account for − write-offs.
⚠This is an estimate, not a measurement. It drifts exactly as far as the kitchen drifts from its cards, and further the older the last count is. That is why the screen states the date of the last count.
A negative balance
Usually one of two things: a delivery was not entered, or the card's quantity is larger than reality. Count that ingredient first, then check the card.
Running out is when «should be there» drops below the minimum. Zero means «do not warn me», and there is no alarm here: this is «bear it in mind at the next order».
