Down in one store, up in another — neither a write-off nor a delivery.

⚠A transfer is neither a write-off nor a delivery. Recorded as a write-off it adds a reason to the waste report that nobody wasted; recorded as a delivery it puts a purchase price into the history and makes every dish with that ingredient dearer.

⚠The units have to match: transferring kilograms into litres leaves both balances consistent and both wrong — and nothing afterwards will notice.

The total is called «transferred» and does not enter the financial report's expenses: value is carried, not created.
